Saturday was my friend Renee’s birthday.  She loves to entertain so she invited a bunch of us girls to her house for brunch.  As much as she loves to entertain she hates to cook.

So, I cooked for the get together.  It was such a pleasure, she has the nicest home kitchen of anyone I know.

I made Spinach Blue Cheese Quiche and Champagne Margaritas, a wonderful combination of two of my favorite drinks.



  • 4 T lime juice
  • 2 oz tequila
  • 2 oz Triple Sec
  • 6 oz champagne or sparkling wine


  1. First you want to get sugar on the rim of the glasses. Put 2 tablespoons of sugar in a small flat plate. Rub a slice of lime around the rim. Turn the glass over and run it through the sugar until the rim is covered.
  2. Fill a cocktail shaker with ice. Add all the ingredients and shake gently.
  3. Pour into the glasses and garnish with lime.
