BACON WRAPPED JALAPENOS

by Reese Millridge I don’t know about you, but sometimes, in my house, I feel like a short order cook.  Hamburgers range from the consistancy of a hockey puck to so bloody you’d think it was a crime scene.  Eggs are eaten so runny I don’t know why we even bother to cook them or so dry if you turned on the ceiling fan they would disappear like dust. Bacon Wrapped Jalapenos offer the same challenge. There are four people in my family and each has a very different preference when it comes to food.  One of us likes...

BEEF ENCHILADAS

by Reese Millridge I was rather surprised when my dear friend Michelle, the publisher of New Grace News, asked me if I would like to write a column for the paper. I am not a writer, nor do I pretend to be. Her request came out of left field, which she knew it would, sneaky little devil that she is. Let me tell you the setup. It was a rainy Monday afternoon when the phone rang. My friend, Michelle, went into the whole ‘it’s been so long’ routine – which was true. She suggested we do dinner one day,...

CHAMPAGNE MARGARITAS

Saturday was my friend Renee’s birthday.  She loves to entertain so she invited a bunch of us girls to her house for brunch.  As much as she loves to entertain she hates to cook. So, I cooked for the get together.  It was such a pleasure, she has the nicest home kitchen of anyone I know. I made Spinach Blue Cheese Quiche and Champagne Margaritas, a wonderful combination of two of my favorite drinks. Print Yum CHAMPAGNE MARGARITAS Ingredients4 T lime juice 2 oz tequila 2 oz Triple Sec 6 oz champagne or sparkling wineInstructionsFirst you want to get sugar...

CHICKEN BREAST STUFFED WITH TOMATO, ZUCCHINI AND BASIL

by Reese Millridge I have a confession to make. I am very surprised to be writing this article. This is only the second edition I am appearing in and I have spent the last two weeks fretting over what to make as if this decision was some crucial turning point in my life. Should I make a vegetable dish to show that I believe in  healthy cooking?  Should I make Amaretto Crème Brulee to show I am creative or will that be seen as decadent? Then on Thursday night my husband, Merrick, told me his cousin and his wife...

CREAM OF ONION SOUP

by REESE MILLRIDGE Today I will be sharing my recipe for CREAM OF ONION SOUP. One thing I love to make is soup. There is nothing better on a cold or rainy day then something hot and filling.  And on those hot days a nice light chilled soup which I can whip up quickly hits the spot. As I believe I have said before there are four members in my family and one is a real pain when it comes to eating –  her favorite vegetable is the onion.  Now I have nothing against onions – I always have...

SPINACH, BACON AND BLUE CHEESE QUICHE

You may have guessed it, I love to cook.  I would love to say that it is my life, however I have a family that would properly object to that, so I won’t put it in print. I will say that cooking makes me happy, which is good since I spend a lot of time in kitchens.  I get the same thrill from creating something whether it is preparing a seven course meal for twenty or smothered French fries for myself once everyone else has gone to bed.  My favorite people to cook for are my girlfriends and I...

THREE GREAT SAUCES FOR CINCO DE MAYO

In case you didn’t know it, Thursday is Cinco De Mayo – the day celebrating the Mexican Army’s victory over the French soldiers in 1862.  I don’t know how it is celebrated in Mexico, but in the USA we have parties, usually with a Mexican theme.  And I do love a theme. Here are three sauces that can be used in and with many Mexican dishes. Each dish is made with a combination of the vegetables shown above. CILANTRO JALEPENO SAUCE INGREDIENTS 4 jalapenos, halved and seeded 2 cups cilantro ½ cup sour cream or yogurt 2 cloves of...

YUMMLY – MY GO TO FOR RECIPES

by Reese Millridge One of my favorite pastimes is to sit down on the floor of a bookstore with a cup of coffee and peruse through the cookbooks. I’ve even been known to do it on vacation where I have picked up books by some wonderful local chefs. At home when I want a recipe the first place I turn is to my cookbook collection, but if I don’t have time or know what I am looking for will not be found there, I turn to the internet, I turn to is more than just a recipe...
